This is my family’s favorite soup! This soup takes traditional chicken noodle soup and gives it a twist. Everyone loves the noodles, and I load each bowl with fresh baby spinach. I think it will become a family favorite for you as well.
Chicken Tortellini Soup
Ingredients:
8 cups chicken broth
1 large boneless, skinless chicken breast
2 teaspoons basil
2 tablespoons parsley
1 cup chopped carrots
1 minced onion (about 1 cup)
1 cup chopped celery
1 bag 3-cheese tortellini noodles
1 small can cream of chicken soup
Fresh baby spinach
Instructions:
Place chicken broth, chicken breast, onion, basil, parsely, and celery in a large saucepan. Bring to a boil, and cook chicken breast until it is tender and can be shredded with a fork. Place shredded chicken back in the broth, and add carrots and tortellini noodles. Bring it back to a boil, and cook noodles until done. When the noodles are almost done, and the broth is still boiling, add the cream of chicken soup. Stir until the broth is smooth. Remove from heat. Serve with raw baby spinach in each bowl.
