I love a good, budget-stretching meal. Because of this, we eat mashed potatoes with hamburger or chicken gravy quite frequently. It’s filling, and the kids love it. I also like country-style white gravy over potatoes. How about you?
I was making country gravy over mashed potatoes a few weeks ago, but realized it wasn’t heavy enough for my hammer-wielding husband. I needed to make it a little more hearty.
Enter the meatballs.
I added them to the country-style gravy, and I had a meal that would fill the hardest working man on the planet. Consider it a little twist to country-fried steak. I hope you enjoy!
Mashed Potatoes with Country-Style Meatball Gravy
Potatoes:
8 potatoes, peeled and chopped
1/2 cup sour cream
1/4-1/2 cup milk
1 cube butter
chopped chives
salt & pepper to taste
Gravy:
2 cups milk
1/4 cup all-purpose, unbleached flour
1/2 stick butter
1 to 2 cups frozen meatballs
salt and pepper to taste
Directions:
Place potatoes in a large saucepan. Boil until tender. While the potatoes are cooking, place 1/2 stick of butter in another saucepan (medium). Let melt, then whisk in the flour to form a roux. Add milk, whisk until the mixture boils and thickens. Remove from heat. Cook the frozen meatballs in the microwave until they are warmed, then add to the gravy. Salt and pepper to taste.
When the potatoes are cooked, drain off water, and then mash with milk, sour cream, butter, chives, and salt and pepper. Serve immediately.
