Parmesan Basil Focaccia

This is a fancy name for a simple bread.  If cut in thin strips, it’s becomes fantastic breadsticks.  Enjoy!

Parmesan Basil Focaccia

1 Tablespoon yeast

1/2 cup hot water

1 cup warm cream

1 Tablespoon sugar

Stir together and let sit until the yeast foams.  Then add:

1 cup flour

Stir in, then add:

1 1/2 teaspoons salt

1 egg

2 Tablespoons olive oil

2 1/2-3 cups flour

Knead together until somewhat stringy.  Place in a greased bowl and let raise for 1 hour. Grease a cookie sheet, spread evenly with your hands, and poke holes with your finger across the entire surface.  Top with melted butter or olive oil and some freshly grated Parmesan and basil.  Bake at 400 degrees until golden brown (20-30 minutes).
