A variation of my popular Meatball Minestrone Soup. Enjoy!
Sausage Minestrone Soup
8 cups water
1/3 cup beef bouillon
1 cup chopped green onion
Olive oil
1 T. garlic, minced
15 small breakfast sausage links, cooked or your favorite sausage
1 can tomatoes
1 can tomato soup
2 cups noodles, any variety you like
2 Tablespoons fresh basil
1/2 cup quick cooking barley
1 cup kidney beans
Saute garlic and onion in olive oil until soft and slightly browned. Add the beef bouillon and water, bring to a boil. Add rest of ingredients. Cook noodles and barley until tender. Serve immediately. Throw Parmesan cheese and spinach on for garnish, if you wish.
