It may not be the best day to post a dessert when an onslaught of Halloween candy is coming, but nonetheless, here it is! It’s better, right? It has real fruit. *wink
I must say, these are quite addictive. I cut some of the sugar out, so they’re not unbearably sweet, and the vanilla pudding + real bananas make it very moist.
Yes, it is smothered in cream cheese frosting.

Banana Pudding Cake
Cake:
1 1/2 cups sugar
3/4 cup prepared vanilla pudding
3/4 cup sour cream
3 eggs, room temperature
1 cube butter, softened
5 overripe bananas, creamed
1 Tablespoon vanilla
3 cups all-purposed, unbleached flour
1 teaspoon salt
1 1/2 teaspoons baking soda
Cream Cheese Frosting:
1 cube butter
1 8 oz. package cream cheese
1 teaspoon vanilla
2 cups powdered sugar
For the cake, cream sugar, sour cream, eggs, and butter. Add the creamed bananas and vanilla. Mix well. Add flour, salt, and baking soda. Mix well. Spread batter into a greased cookie sheet. Bake @ 350 degrees for 15-18 minutes. While the cake is baking, make the frosting. Blend the butter, cream cheese, and vanilla together until they are smooth. Add powdered sugar (2 cups is approximate…add more or less according to how stiff you want your frosting) and beat until well incorporated. After the cake has cooled, spread on top.
