I’ve seen this way of preparing eggs on Pinterest for awhile. I finally had to try it myself. It is now our family’s “power’ breakfast. The omelettes are so easy to make! Even on a hurried morning, you can stir them together, pop them in the oven while you rush around, and come back to a hot breakfast. It’s so much better than cold cereal. Save the extras in the refrigerator, and heat them up for snacks or another breakfast. Enjoy!
Mini-Omelettes
7 whole eggs
1 cup baby spinach
1 cup shredded Mozzarella cheese
1/4 cup milk
Salt and Pepper to taste
Whip all ingredients together in a medium sized mixing bowl with a whisk. Grease a muffin tin (one that holds 12 muffins or cupcakes). Drop egg mixture into the muffin tin, bake @ 375 degrees for 20 minutes.
