Isn’t simple food the best? This recipe doesn’t have a lot of ingredients. It is filling, kid-approved, and best of all: it cooks itself in a slow cooker.
Enjoy!
Sausage, Bean and Swiss Chard Soup
8-10 cups chicken broth
1 small bag dry, baby lima beans
1 smoked sausage
1 cup coarsely chopped sweet onion
1 Tablespoon dried basil
2 Tablespoons dried parsley
Salt and Pepper to taste
Chopped Swiss Chard or Spinach
In a skillet, cook chopped onion and sausage in a little bit of butter, until onion is soft and has browned. Place in a slow cooker, and add the rest of the ingredients to the slow cooker as well; all except the Swiss Chard. Cook on high for 5-7 hours, until the lima beans are soft. When you serve the soup, add the chopped Swiss Chard on the top of each individual bowl.
