I’ve had this recipe forever in my homemade binder. It is from a magazine, although it was ripped out and I’m not sure which one. Why I haven’t tried it in all these years, I’m not sure, but it’s a keeper. The original recipe was made with fresh strawberries. I made mine with raspberries.
It is beautiful, and actually quite light. And, as a plus, it’s easy to make. I hope you enjoy it!
Frozen Raspberry Dessert
4 cups fresh strawberries or raspberries
1 can sweetened condensed milk
1/4 cup lemon juice
1 tub Cool Whip
8 Oreo cookies
1 Tbsp. butter
Line an 8×4 bread {loaf} pan with foil. Mash 2 cups of berries in a large bowl. Stir in condensed milk, lemon juice, and 2 cups Cool Whip. Pour into the loaf pan. In a plastic bag, combine cookies and butter. Crush together with a rolling pin, and when combined, press over the top of the berry mixture. Freeze at least 6 hours. To serve, invert onto a plate, top with remaining Cool Whip and berries. Serve immediately.
