Bacon makes everything better.
I happened to snatch up a bag of brussel sprouts at my local grocery store on a whim. Then I realized we don’t eat them very often.
An internet search led me to lots of recipes for roasted brussel sprouts with bacon, and I gave it a try. It was delicious! One of my kids wasn’t a huge fan, but everyone else ate them (even my husband, who isn’t a big fan of anything green). My favorite thing? The easy prep for a hearty side dish. It’s also very pretty.

Roasted Bacon and Brussel Sprouts
1 1/2 lbs. brussel sprouts
1/2 lb. bacon
Preheat oven to 375 degrees. Cut bacon into 1 inch strips. Spread across a cookie sheet so they aren’t touching, then bake until they start to brown (make sure they are still somewhat soft). This takes approximately 15 minutes. While the bacon is cooking, cut brussel sprouts ends off then cut in half. Remove from the bacon from the oven, and drop in brussel sprouts. Stir together, then pop back into the oven. Roast until the veggies start to brown and the bacon is cooked through; approximately 10 more minutes. Serve immediately.
