This is a fast summer meal you can throw together for your family!
Shrimp and Mushroom Rice Pilaf
2-3 cups pre-cooked shrimp
2 cups Kashi rice pilaf
4 cups chicken broth
1/2 cup chopped green onion
1/2 cup chopped celery
1-2 cups fresh mushrooms, chopped
Cook the rice pilaf according to the directions on the box, using chicken broth instead of water. While it is cooking, chop the celery, onion, and mushrooms. Quickly saute shrimp and vegetables in butter and lemon pepper in a frying pan. When everything is cooked, stir together and serve immediately.
