Simple Chocolate Cake

Do you like frosting on your cake?

When we were kids, we begged our mom to leave it off.  She would laugh and say….

“When we were kids, we hated that our mom never put frosting on the cakes.  We begged her to make frosting so it wasn’t ‘bare naked’ “.

So which camp do you fall under? Either way is good, right?

There are some recipes that don’t need anything more than the basics, and that is what makes them great.  I tried this chocolate cake recipe last week, via the Testado, Provado e Aprovado! blog.  It was so easy to make, it only makes enough to fill a 9×9 cake pan (meaning I can’t over-indulge), and it has a glaze on it that melts into the cake.  I LOVE the fact that it isn’t really sweet. I guess you can say it’s the best of both worlds.

Simple Chocolate Cake

Preheat the oven to 350 degrees.

Cake:

1 1/2 cups all purpose flour
1 cup sugar
1/2 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup canola oil
1 egg lightly beaten
1 cup boiling water
1/4 teaspoon salt
Break the egg into a small bowl and beat slightly with a fork.  Let it sit at room temperature while you sift the dry ingredients together with a whisk. Add the egg and oil, and whisk again. Add the boiling water, and whisk until well incorporated.
Bake @ 350 degrees until a skewer of some sort can be inserted and come out clean (about 20-25 minutes). While it is cooking, prepare the glaze.
Glaze:
1/3 cup sugar
2 tbsp cocoa powder
1 tsp butter
1/2 cup water
1 teaspoon vanilla or grated orange peel
Combine all ingredients in a small saucepan (except if you are using vanilla) and bring to a boil.  Cook over medium heat until the mixture has thickened a little. Pour over the cake while the cake is hot….right when it comes out of the oven.  Let cool and serve!
