If there was one thing I would say is my “specialty” (as far as cooking goes), it would be baking bread. I have tried hard to master it over the past decade, and I think I’ve got a pretty good handle on it.
This is my standard sandwich bread. We use it for everything! The fresh-ground wheat makes it extra nutritious, and there is limited sugar.

Wheat Bread
(makes 5-6 loaves)
5 1/2 cups warm water
4 Tablespoons yeast
2 Tablespoons cup sugar
Mix together and let rest until the yeast is fluffy. Then add:
1/2 cup oil
1/2 cup honey
2 Tablespoons salt
6-7 cups fresh ground wheat flour
6-8 cups all-purpose, unbleached flour
Mix in a Bosch mixer for 5-7 minutes….until dough pulls from sides of bowl and is kneaded very well. Let raise 1 hour or until double in bulk, then roll out and place in greased bread pans. Let raise until the dough is arching 1/2 inch above the top of the pans, then cook for 30 minutes in a 350 degree oven.
