I am a mango lover. We buy them in bulk in season. When they aren’t in season, I buy the dried variety in bags from Sam’s Club. We also stock up on the pre-cut, frozen mangoes. Well, did you know you can also make your own fruit roll-ups out of mangoes? You don’t need anything but a blender, the fruit, and an oven. No other ingredients are required. It’s so extremely easy, I’m still kicking myself that it’s taken me this long to make them.
There is one downside: one batch doesn’t make very much. So you might want double or triple this recipe. Just make sure to use more cookie sheets. They won’t work if you double the fruit in the pan.

Mango Fruit Leather
2-3 fresh mangoes of 2-3 cups frozen, cubed mangoes
Blend mangoes until smooth. Spread on a greased cookie sheet and bake at 200 degrees for 4 hours. The fruit leather is done when it starts to look dry and wrinkle. Let cool completely in the pan, then slice with a pizza cutter and roll.
