What is the biggest benefit to having all this snow (besides having water this summer)?
You can serve hot, bubbling soup with lots of earthy vegetables every day of the week.
Mushroom and Wild Rice Soup
8 cups chicken broth
1 cup each of diced carrots, celery, and onions
1 box Uncle Ben’s Quick Cook Wild Rice, with seasonings
1 small box fresh mushrooms
1 can cream of chicken soup
1 cup cream
2 T each dried parsley and basil
Fresh baby spinach, optional
Saute diced veggies in 1 Tablespoon butter and 1 Tablespoon olive oil. Add broth. Bring to a boil, and add rice, mushrooms, parsley, basil, and other seasonings. When rice is cooked, add the cream of chicken soup and cream. Serve with baby spinach and your favorite side of bread.
