Sweet, gooey, oozing joy. That’s what caramel is. It makes everything better. I’m pretty sure if we had more caramel in our lives, we would all be happier.
Today I’m sharing another caramel recipe that is the perfect frosting to top a white or chocolate cake. I think it would be great to dip apples into as well.
We did healthy last week, so we need to balance it out with some unhealthy, right?

Caramel Frosting
2 cups light brown sugar
1 cup cream
3 Tablespoons butter
1 tsp. vanilla extract
1 1/2 T. rum
2 1/2 cups powdered sugar
Combine the sugar and cream in a medium sized saucepan. Cook over medium heat until mixture starts to simmer, then let it simmer 2 minutes more. Remove from heat, and drop butter in. Let it rest on the top until the mixture has cooled. Add vanilla and rum. Then beat the powdered sugar in with an electric beater. Serve with or on your favorite dessert!
