It doesn’t take much to incorporate more veggies into your family’s diet.
I’ve started blending cooked veggies (with a little bit of chicken stock) into our pasta sauce. We’ve also been enjoying smoothies for breakfast or dinner, which are mango or mixed berry, and I’ll add fresh spinach and flax seed to give my family added nutrition.
My father-in-law has also gotten on a health kick, and he shared a great tip to me a few weeks ago. It is a way to preserve fresh spinach. It is especially helpful if you buy spinach in bulk (like we do).
Are you ready?
Preserving Spinach for Smoothies
Place your desired amount of spinach in a muffin tin. Fill each cup with water. Place muffin tin in the freezer.
When the water has frozen, take the muffin tin out of the freezer. Let the spinach thaw at room temperature until you can remove the spinach + ice from the tray. Take the “spinach cubes” and throw them back into a bag. Return to the freezer.
Now you’ll have the perfect amount of spinach + ice to throw into your smoothies whenever you want!
